2008 HEATHCOTE RESERVE NEBBIOLO

Strict bunch sorting followed by wild yeast fermentation with extended maceration (75 days on skins) before gentle pressing. The 2008 Reserve Nebbiolo was matured in an old, French oak puncheon for 18 months, before bottling without fining or filtration, and a further 6 months in bottle prior to release. This wine needs extended decanter time to open up (5-7 hours). Match with sauteed pine mushrooms and tajarin.
